Happy Thanksgiving

About 3 weeks ago, I noticed out my window at work, a little creativity going on at the neighbors. I watched it increase in size through the weeks and thought, "OK, they are just getting ahead while the sun shines" Yesterday, at 4:10 PM, the lights went on--complete with 3 or 4 blow up figures. I don't know about you, but I'm not ready for this!

Do You Remember?
Do you remember Hot Spam sandwiches? You know, 1 can of spam shredded, equal amount of Velvetta cheese shredded, chopped onion and then ketsup to hold it all together. Place on half a hamburger bun and then broiled in the oven until hot and melted. Well I love thoses sandwiches and I mixed up a batch today. I didn't feel like turning the oven on for just two, as Rodney is in Montana, so anyway, I thought, why not grill them like a grilled cheese sandwich! Was it good you ask! I thought it was better than from the oven. Then another thought occurred to me. This would make a great sandwich when camping. You can bet it will be on our next trip.

Better late than never
I forgot that I promised I would post these!
Mango Salsa
1 can black beans, drained and rinsed
1 can white corn, drained
1/2 c fresh cilantro, chopped (or more if you like)
1/4 c. red pepper, chopped
2 TB red onion, chopped
2 ripe mangos, diced
Put all together in bowl and lightly toss.
Dressing
1 pkg. dry Italian dressing mix
2 TB lime juice (or more)
1 TB vegetable oil
Mix together. Pour over the other ingredients and stir.
Monster Bars ( an easy alternative to Monster Cookies)
1 stick softened oleo or butter
1 c brown sugar
1 c white sugar
1 1/2 c peanut butter
3 eggs
1 t vanilla
2 t baking soda
4 1/2 c oatmeal
1 - 12 oz pkg chocolate chips
1 - 12 oz pkg M&M's
Mix all ingredients in order in large mixing bowl. Press into large, greased jelly roll pan. Bake 15-20 minutes at 350 degrees - DO NOT overbake!!
Now -- how about the Gin Bucket Recipe?????

4th Generation

We had a great time at camp. I know there have been others that have blogged, but thought I would put in my 2 cents worth. It just was really great to be with family, and so many of us at that. To everyone that cooked--thanks so much. It was all yummy! A special thanks to Chuck for the wonderful campfires each night. They were super and very enjoyable and an excellent way to end the day! A great time to tell our jokes. (I found my folder of jokes that I was going to bring along just the other day!) I guess thanks to my sisters for getting me out in a kayak (second time ever). Maybe each year will get easier and I will make it to the Point sometime. Nieces and nephews-it is wonderful to see you and your families and how they have grown. Those two little girls are precious. I look forward to hearing news of the new little Holliday soon. Jon and Heidi, your presentation was great and I was so happy I could see it. You already know that it moved me to tears. Keep up your great work for the Lord--you inspire me.
Bean Bag Tournament?? Perhaps next year I will be better organized--or I will hand it off to one of the younger ones. At any rate, congratulations to the two lefties that won. And I would be remiss if I did not thank mom for making the week possible. I am sure that having all of us under foot is a bit much for that period of time, but know that we appreciate your generosity. You have started a tradition in the family that I hope we can continue for a long time. Hugs and I love you always complete the weekend, and I know that I missed some of you when you left, so, OXOX, I love you all!

It's Finished!

And will be delivered to Camp Okoboji tomorrow for the auction. Do you know that there are approximately 1200 knots in this little quilt? I think that it turned out pretty good if not cute! Another great project by the 4 sisters and a mom! (with some added help this year from Allie and Emily--thanks!)
Wanted to include a little project going on at our house by Buena Vista University. It seems that we have a nest of crows in our tall evergreen by the garage. A professor from the university and his students have been tracking them. Two weeks ago they came and climbed the tree to retrieve the babies and tag them. It was quite interesting to watch and we learned a lot.



The babies should be learning to fly now, and we did see one on the ground yesterday--quite visible with his orange tags. The parents were very watchful and vocal. I don't know if he ever got off the ground but didn't think I wanted to help him with all that cawing going on.

As Promised
Ok, Kristi has a valid point. We have not been very good about "Keepin' Up". We all have a lot of pictures from our recent trip to Mazatlan, but I won't bore you with some of them. But as promised, we did manage to have a drink for all of you, perhaps even more??? This picture is just one of them. Unfortunately, the names do not show up clearly. But rest assured--you were all thought of as we drank them!
Did we get carried away you ask?? As Tony keeps saying, "What happens in Mazatlan, stays in Mazatlan!" We did have a few "Did I do that??" moments.
And we also had some "Ahhhhh" moments.
Even though Mike and I only stayed a few days, it was really nice to get away. The weather was great, a little cooler than last year, but still enjoyable. And the coconut shrimp--just makes my mouth water thinking about it! But one of the best parts of being there, aside from being with family, is seeing a beautiful sunset every evening!

Not much to say--just thought that someone should blog. We are all happy that mom is doing better. Becky has been a godsend to her this past week. We are anxious to see what the doctors tell her tomorrow; that is if she can get to Sioux City. We are expecting a little snow tonight and tomorrow. Carole and Becky will be traveling with her. Becky will stay in Sioux City tomorrow night as her flight leaves at 6:55 AM Tuesday.
